

What is an Amatriciana Sauce? It's the classic sauce from Amatrice, not far away from Rome, and a favourite amongst Italians. It is tomato sauce with pancetta i.e. a diced specific type of ham that can resemble bacon, but has a higher and leaner quality and its origin is DOP. It is slowly cooked and ready for you to be re-heated and eaten.
Many theories exist on which pasta to eat Amatriciana with, but we'd suggest a long type, spaghetti or bucatini. Otherwise a classic, penne rigate, that contain the sauce within the little stripes.
